Bubble Milk Tea

Bubble milk tea is a drink that you MUST drink when you come to Taiwan. It is a drink that every Taiwanese has drunk at least once in their lives and it is the most famous drink in Taiwan.

Bubble milk tea was invented in 1980 and there are two shops that claim themselves as being the inventor of the famous beverage, they even went to court on this situation. Unfortunately, no one won the case because they didn't apply for a patent.
There are many shops in Taiwan that sell bubble milk tea, but you can actually make it at home by yourself and it is really easy.

Ingredients:
Milk
Black Tea
50g of Tapioca Flour
15g of brown sugar
35 c.c. of water
Steps:
1. Pour the water and the brown sugar into a pot and boil it
2. Add the tapioca flour into the pot IMMEDIATELY after you flameout
3. Mix the tapioca flour evenly into the mixture and let it cool down
4. Put the cooled down dough into a plastic bag
5. Use a rolling stick to pole flat the dough
6. Take the flat dough out of the plastic bag
7. Slice the dough into little squares and rub it into little balls

8. Boil some water and put the little balls into the pot
9. Cook the balls for 5 minutes and cover up the pot for 20 minutes
10. Make the milk tea for the beverage(you can make it however you like)

11. Put the milk tea and the bubbles together~~
12. Finished!!!
The bubble milk tea shop that I like best is "珍煮丹" (JenJuDan). It has a lot of bubbles in it and the beverage is in good portion. The thing about "JenJuDan" is that they don't use milk tea, instead they use milk and melted brown sugar. The bubbles in the beverage are also cooked with brown sugar, meaning that when they cook the bubbles, they don't use water, they use brown sugar. Overall, I think "JenJuDan" is a really good bubble milk tea shop because the bubbles are really tasty and it is ranked third place in Taiwan for the most bubbles in their beverages.
